Would you like to see what early iPad prototypes looked like? Network World was able to look into designer Jonathan Ive's archives containing photographs of a 3D mockup of Apple's tablet, created between 2002 and 2004.

The layout is called 035 and looks like a thick piece of plastic in the shape of a tablet without the familiar Home button. The design is far from the modern version of the iPad, but it looks quite futuristic by the standards of the early 2000s.
Network World quotes Jonathan Ive's answer to the 035 layout question:

When asked if 035 was a mockup that Ive made, he said:

Undoubtedly, the iPad influenced the design of subsequent tablets from other manufacturers, just like the iPhone changed the concept of a telephone.

At the 2010 All Things D conference, Steve Jobs admitted that Apple started work on the tablet earlier than on the smartphone:
According to Nick Bilton of The New York Times, the earliest iPad prototypes date back to 2000 and were 7-inch like the iPad mini.
Regardless of size, Steve Jobs didn't like early prototypes.
Jobs stopped a huge amount of early development at a stage when it was ready for production and sent engineers back to the drawing board.
According to Bilton, Jobs could not imagine such a bulky, energy-intensive and ugly device in the hands of people.
